“The inspiration stems from a contemporary reimagining of classic recipes, focusing on the freshness of using local ingredients," explains Executive Sous Chef Matteo Fontana. "Highlights include sunchokes and cauliflowers, while the lamb leg, a quintessential element of winter cuisine in many Western countries, is expertly prepared using traditional braising techniques." explains Matteo.
The four-course journey begins with Amberjack Fish and Avocado Tartare, topped with Oscietra Caviar, followed by Homemade "Plin" Ravioli Filled with Braised New Zealand Lamb Leg in a saffron sauce and crispy leeks. Guests can choose between a main course of Grilled Australian Wagyu Beef Striploin topped with crushed pistachios, served with sunchokes, caramelized onions, and rich beef jus; or Pan-Seared Antarctic Black Cod served with roasted cauliflower, crispy guanciale, black garlic, and a rich paprika beurre blanc. The seasonal set menu concludes with a delightful Valrhona Chocolate Pavlova, served with raspberry sorbet.
