From this ingredient, the culinary team presents three signature expressions, each unfolding as a chapter within the story. Doi leaf-wrapped Norwegian Salmon with Ponzu Saffron Sauce brings a subtle local nuance, where aromatic doi leaf embraces the salmon and meets the lightness of ponzu and saffron, creating a refined balance and a sense of inspired transition. Soy-marinated Norwegian Salmon Belly with Slow-Cooked Egg Yolk reaches the heart of flavor, where silky richness and umami depth come together, symbolizing renewal, wholeness, and balance at the start of the year.
