This thoughtfully curated five-course experience showcases his heritage, highlighting fresh, high-quality ingredients such as red prawn carpaccio, Stracciatella cheese, and Australian Wagyu.   The journey begins with a Lime Marinated “Rosso di Mazara” Carpaccio, pairing thin slices of red prawn with creamy burrata and caviar. Next is the Bell Pepper and Tomato Orzotto, a barley risotto topped with silky Stracciatella cheese. The third course highlights Chef Matteo's signature Homemade Braised Duck Leg Ravioli, inspired by his grandmother's recipe and complemented by pumpkin purée and morel mushroom sauce. For the main course, guests can choose between the Filetto di Manzo “alla Rossini”, featuring Australian Wagyu tenderloin with brioche bread, sautéed spinach, foie gras, truffle carpaccio, or the Pan Seared Atlantic Toothfish Puttanesca Style, served with tomato sauce, olives, capers, and anchovies.
