Served in a sharing feast format, this menu uncovers earthy European winter flavors accentuated by the contrast of refreshing local Thai ingredients which Chef Arne enjoyably handpicked including Nan olives, Chiang Mai strawberries and calamansi, as well as the crispness from local lotus stems and watercress.   The journey includes 18 handcrafted dishes in a shared dining experience, beginning with snacks like Foie Gras—Hazelnut—Cherry and Lotus Stem—Lemon—Mint. The experience continues with starters such as Kohlrabi—Watercress—Pea and Smoked Sturgeon—Capers—Thai Olive, followed by mains like Wagyu—Celeriac—Truffle and Arctic Char—Carrot—Calamansi.
